Mmmm...Monday: Plum-Apple Butter



I found this recipe last year when I was up to my ears in apples & plums from our trees.  It's highly addicting, and a great way to sneak some fruit into your diet.  I like to eat it on pancakes instead of syrup.  Ross says it tastes like Christmas, but I just think it's darn good.  I've reduced the sugar in it because I don't think it's necessary, but if like sugar, by all means, put in the whole 3 cups. 

Ingredients:
• 2 lbs tart apples, peeled & quartered
• 2 lbs plums, pitted & quartered
• 1 c water
• 1/2 - 1 c sugar (taste it after you add 1/2 c to see if you need more)
• 1 1/2 tsp ground cinnamon
• 1 tsp ground nutmeg
• 1/4 tsp ground allspice

Directions:
Place apples, plums and water in large kettle; cover & simmer until tender, abot 15 minutes.  Cool.  Puree in batches in a food processor or blender; return all to the kettle.  Add sugar & spices.  Simmer uncovered for 20-30 minutes or until thickened, stirring frequently.  Cool completely.  Pour into jars.  Cover & store in refrigerator for up to 3 weeks.  Or, if you're like me, you can can it while it's still hot so you can enjoy some all year.
