Mmmm...Monday: Quick Quiche

This is one of my go-to meals when I need something quick.  It's low-calorie, too, which doesn't hurt.  It's something I can actually get Jack to eat, and it's great served with toast, biscuits or muffins.  Yum.


Ingredients:
• 4 oz. shredded cheese
• 8 oz (1/2 frozen bag) broccoli tops
• 4 eggs, beaten
• 1 1/2 c milk
• 2 T dried minced onion (or 1/4 c fresh onion)
• 1 tsp salt
• 1/4 tsp dried mustard
• 1/8 tsp white pepper
• 1/2 c all-purpose flour

Directions:
Preheat oven to 350°.  Lightly grease a 9" pie pan.  Steam broccoli in microwave for 4 min. (I usually get the bags from Wal-Mart...they only contain the top pieces and not the stems, which can be really tough.  I then put half a bag in a bowl, add a tsp or 2 of water, cover with plastic wrap and steam in the microwave.)  Line bottom of pan with cheese.  Place steamed broccoli on top of cheese.  In a separate bowl combine remaining ingredients; whisk together until smooth & pour into pie pan.  Bake in preheated oven for 35 minutes, or until set.
