Mmmm...Monday: Cucumber Sandwich

I love sandwiches. As a meal option they provide endless possibilities...hot or cold, turkey or chicken, miracle whip or mayo? There's something about making all those choices that's so empowering. And I must admit...I'm a sucker for a good veggie sandwich. No meat, just lots of vegetable deliciousness. I highly recommend this one. I found the recipe (and photo) on allrecipes...my favorite recipe website.  It's great for using up all those tomatoes from your garden...or your parent's garden. 



Ingredients:

• 2 thick slices whole wheat bread
• 2 tablespoons cream cheese, softened
• 6 slices cucumber
• 2 tablespoons alfalfa sprouts
• 1 teaspoon olive oil
• 1 teaspoon red wine vinegar (I used balsamic vinegar, since that's what I had)
• 1 tomato, sliced
• 1 leaf lettuce
• 1 ounce pepperoncini, sliced
• 1/2 avocado, mashed (I sprinkled a little onion salt & garlic powder on my avocado to make it extra yummy)

Directions:

Spread each slice of bread with 1 tablespoon cream cheese. On one slice of bread, arrange cucumber slices in a single layer. Cover with sprouts, then sprinkle with oil and vinegar. Layer tomato slices, lettuce, and pepperoncini. Spread other slice of bread with mashed avocado. Close sandwich and serve immediately.

Note: I left off the lettuce & sprouts, since I didn't have them, and it was still delicious.  Though I'm pretty sure it would be even better with them.
